– THE RECIPE –
Red prawn tartare, Norway lobster carpaccio with
quinoa and Balik salmon eggs, papaya coulis with marinated ginger,
wasabi and Balsamic Vinegar pearls.
What do you need?
• Two large Norway lobsters
• Four red prawn from Sicily
• 100 grammes quinoa seeds
• 100 grammes fresh ginger
• 50 grammes papaya
• Balsamic vinegar pearls in a jar
• Wasabi paste
• Balik salmon eggs
• Sichuan pepper
Clean the prawns and the lobsters, dice the prawns for the tartare, lightly beat the lobsters with a meat mallet. Cook the quinoa seeds in water, drain and let dry out a little, then season with salt, pepper and a little extra-virgin olive oil.
Prepare the papaya coulis and put it on a plate and lay the prawn tartare on it helping yourself with a food ring mold.
Prepare a bed of quinoa and place the Norway lobster carpaccio on top of it.
Decorate quinoa with the Balik salmon eggs, sprinkle some lime and ginger zest and finish off with a heart-shaped wasabi.

• To decorate the dining room with candles for a romantic atmosphere.
